Welcome to Eat Healthy-Be Healthy. I’m Jodi D. and this is my official blog. For the past couple of months, I have been sharing some of my favorite recipes, and now I am expanding. Not only will I continue to find you healthy and delicious recipes, I will also share some nutrition and exercise tips with you. I hope you enjoy!
The most important tip I can give you is to be mindful of what you eat and drink! What you put in your body is important because food is like fuel, and you want to make sure you are getting the best kind. You also need to ensure your needs are met. If you are hungry, then eat! Once you are full, then stop! Listen to what your body needs, and make sure to be kind and understanding of it. It’s the only one you’ve got.
I’ll have many more tips to share in the future, but for now, I hope you all stay happy and healthy!
Recipe: Here is a Ukrainian cucumber salad I found online. I hope you enjoy it!
Ukrainian Cucumber Salad
1 ½ long English cucumber, chopped
1 ½ pounds of tomatoes, chopped
¼ cup of red onion, thinly sliced
3 Tbsp. of dill, finely chopped
2 Tbsp. of Extra virgin olive oil
2 Tbsp. of Toasted sesame oil
½ tsp. Of Salt
Ground black pepper to taste
Vinegar to taste(optional)
- Add the cucumbers, tomatoes, onions, dill, olive oil, salt, and pepper together in a large bowl.
- Then stir gently from the bottom in the center of the bowl until well combined.
- Salad tastes best when served immediately. It makes 8 servings.
