
Jodi's 2nd Recipe Suggestion
Soup is't exactly a summertime food, but if you find yourself in the mood for it, then let me help you out. Here is a quick and lovely soup for you to enjoy!
Ten Minute Soup-Serves 6 as a side dish.
Ingredients:
3 tablespoons salted butter
2 tablespoons all-purpose flour
1 tsp. sugar
½tsp. kosher salt
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
Directions:
- In a small soup pot over medium-low heat, melt the butter. When the butter is melted, whisk in the flour, sugar, salt, paprika, and chili powder. Cook, whisking constantly, until the mixture has a nutty, savory aroma. This will take about 3 minutes.
- Whisk the strained tomatoes, chicken stock, and vinegar into the butter mixture until smooth. Raising the heat and bringing it to a simmer, stirring occasionally, let it simmer for about 5 minutes.
- Ladle the soup into bowls and enjoy.
